Quarter Beef

A quarter of beef is the proportionate ½ of the front and back of one side of the beef. You receive the same cuts that you would get from ordering a ½ or whole animal just less of them. Typical cuts include:

  • Steaks – Ribeye, T-Bone, Filets, Sirloin Flank and Skirt Steaks;
  • Roasts – Chuck, Arm, Rump;
  • Other – Hamburger, Ribs, Brisket, Tenderized steak, stew meat, oxtail, organs.

Depending on the weight of the animal, the pounds of retail cuts that go in your freezer can vary between 100-150 pounds or more. Please note, If you purchase a ¼ you will be paired with another individual and the cutting order will need to be relatively the same. Our processor is very good and will work with you on any custom cuts that you prefer. We often get questions of how much freezer room do I need. Typically, you will need 5.7 cubic feet of space.
